Dish ingredients 🍲
450 g vine leaves / about half a kilo
- 2 cups of medium grain rice
- 864 grams of small tomato slices
- 1 bundle chopped parsley
- 1 medium onion, chopped
- Half a cup of olive oil
– 1/4 cup + 3 tablespoons concentrated pomegranate juice (pomegranate molasses) or lemon juice
Juice of a third of a lemon
Black pepper as needed
- Half a teaspoon of spices (various Syrian spices “optional”)
- 2 teaspoons salt
- 2 sliced potatoes
Method 🍽️
1. Prepare the grape leaves.
If the leaves are fresh, the stems should be cut and stacked on top of each other.
Put them in boiling water for 5-7 minutes.
2. Wash grape leaves with ice water, you can put them in the refrigerator in one bag, and keep them for a year.
And if you use the jar to store grape leaves, add boiling water for two minutes to get rid of the preservatives and salt, and then wash them with ice water.
3. To prepare the filling, fry the chopped onions in ¼ cup of oil. And don't make the onions turn yellow.
4. Add the tomato cubes and cook for two minutes, then the parsley, wash the rice and dry it.
Add 3 tablespoons of pomegranate molasses or lemon juice, 1 teaspoon salt and black pepper and mix well.
5. Stir the ingredients and cook for 5 minutes on a very low heat.
After cooling the grape leaves, start placing the filling on the grape leaf (on the smooth side).
6. Place a tablespoon of the filling horizontally and fold the sides and roll
7. You can also stuff green peppers, cabbage leaves, eggplant, zucchini or other vegetables.
8. In a large bowl, place potato slices on the bottom and top with the wrapped grape leaves.
9. Fill a teaspoon of salt and put it in a cup of water with some black pepper, a quarter cup of olive oil, a quarter of a cup of pomegranate molasses (or lemon juice), and a third of a cup of lemon juice and add it to the bowl and cover it.
